Smoothie Saturday

Since finishing college fir the summer I have been very busy. Meeting friends for lunch, days out with family, busy decorating our little love shack. Basically I am in need of little detox. Hence, this week, I have chosen to share a recipe super green smoothie.

Ingredients:

(serves 2)

300ml coconut water
1 scoop synergy organic super greens
1 teaspoon freshly chopped ginger
Handful Spinach
1 stick celery chopped
2-3 inches cucumber chopped
1 green apple chopped
1 pear chopped

Add coconut water to blender. Add the rest of ingredients. Blend well and serve.

Whatever you get up to this weekend, I hope you enjoy it with a smoothie squeezed in at some point!

Cashew Cookies

What if I told you that these cookies are gluten-free, dairy free, sugar-free, wheat free and still easy to make. Impossible right? Wrong! Not only are these clean ‘cookies’ free from all those nasties but they only contain three ingredients and involve no baking. Homemade and healthy, go forth and create these deliciously healthy snacks as alternative to reaching for the biscuit jar when you’re really hungry and tempted to abandon your healthy efforts.

Ingredients:

{yields 8-10 cookies}

  • 300g cashew nuts
  • 100g dried dates {stones removed}
  • 1 teaspoon vanilla extract

Method:

  1. In a blender, blend 200g of the cashew nuts so that they are finely chopped.
  2. Roughly chop the remaining 100g of cashews so they are a little chunkier.
  3. Put all cashews into a mixing bowl.
  4. Blend the dates (make sure to remove the stones) with the vanilla extract and a teaspoon of water if desired. Blend until smooth.
  5. Smoosh together the dates mixture with the nuts.
  6. Line a dish with greaseproof paper and firmly press the mixture into the dish.
  7. Allow to set in the fridge for at least three hours.
  8. Remove and cut into individual portions. Store in an airtight container.

Smoothie Sunday

Disguise the all important nutrient dense and vitamin enriched green veggies with deliciously sweet and super healthy smoothie. It is the perfect time of year for pineapple as it is most sweet during the spring season.

Ingredients:

1 cup chopped fresh pineapple
1 banana
2 cups of spinach
Green Powder {the brand I use is Synergy Organics}
200-400ml Coconut Water {depending on number of servings and preferred consistency}
Ice cubes

Green, purple, red, pink, white, the smoothies I make on a daily basis have been every colour even dirty brown. It is so easy it is to make healthy smoothies that help your body glow from the inside out so I have decided to dedicate one post a week to a new smoothie recipe that I regularly blend up in my kitchen.

A quick simple post about a smoothie. I can commit to that. I hope.

Ingredients:
200ml Almond Milk
Handful Frozen Raspberries
Handful Strawberries
1 tablespoon goji berries
1 tablespoon chia seeds
1 tablespoon linseeds
